Tilefish with Ginger and Soy

A great recipe for poaching tilefish, and can be used with any kind of white fish fillet! 

Ingredients

2 tbsp Vegetable oil
1 tbsp Fresh ginger
1 ½ lbs White fish fillets
½ cup Soy sauce
1 ½ cups Water
½ cup Scallions 
½ cup Cilantro
1 tsp Rice vinegar
Scallions 

Instructions

1. Cook ginger: In a 12-inch sauté pan, heat 2 tablespoons vegetable oil and add 1 tablespoon minced fresh ginger ginger. Cook for about 30 seconds.

2. Add fish and remaining ingredients: Add the fish filets, ½ cup soy sauce, 1 ½ cups water, ½ cup chopped scallions, ½ cup chopped fresh cilantro, and 1 teaspoon rice vinegar and bring to a boil. Once at a boil, cover the pan, and remove it from the heat.

3. Leave to rest: Leave to sit covered for 10 minutes (15 minutes for larger fish fillets).

4. Serve: Transfer the fish to shallow bowls and divide the broth among the bowls. Garnish with shredded scallions and serve.
