Scallop Sauté
Ingredients

1 lb bay scallops
-
2 TBS peanut oil
-
1 tsp garlic, minced
-
1 TBS fresh ginger, minced

3 scallions, chopped
-
1 TBS dry sherry
-
1 TBS soy sauce
-
1 TBS water or stock (chicken, fish, or vegetable)

Salt & pepper, to taste
Instructions

Heat a large skillet or wok over medium heat for a couple minutes; add oil, garlic, and ginger.

When ingredients become aromatic, add the scallops and cook, stirring occasionally for about 4 minutes or until they begin to brown, then add salt and pepper. Remove the scallops from the pan.

Deglaze the pan with sherry, soy sauce, and stock or water.

Add the scallions, stir, then return scallops to the pan, heat while stirring.

Serve over white rice. Nice!
